Delicious Pork with Catherine & Francis Brennan The Dream Team

Well, another exciting fun filled week. The highlight of my week has to be last Friday when myself and the hilarious Francis Brennan took to the kitchen. We were in Dublin together for the ‘Deliciously Versatile Pork Campaign in association with Bord Bia.  Now, I have heard we were called an ‘unlikely duo’ but I have to say as long as I stuck to the cooking and Francis stuck to the washing up we really were a great team. You see I kind of knew we were in trouble when Francis confessed to me  that he didn’t even know how to turn on the oven !!! I

Despite this mishap we still managed to cook my delicious Honey Marinated Pork Chops & Mango Salsa and Francis very kindly agreed that my dressing was ‘very exotic’. Thanks Francis

To recreate our Catherine/Francis magic in your own kitchen, here is my foolproof recipe.

Pork Chops with Mango Salsa and Spinach (2)

Honey Marinated Pork Chops with Mango Salsa and Sautéed Spinach

This recipe is really quick to prepare and cook and perfect for a tasty evening meal for you and your family. The mango and chilli in the salsa compliment the natural flavour of the pork.

Serves: 4

Time: 30 minutes

4  pork chops, well trimmed

Salt and freshly ground black pepper

Marinade

1 tablesp. honey

Grated rind and juice of 1 lemon

2 garlic cloves, peeled and crushed

2 tablesp. fish sauce

1 tablesp. olive oil

Salsa

1 large mango, peeled and diced

1 red chilli, deseeded and finely chopped

1 garlic clove, peeled and crushed

2 scallions, finely sliced

Juice of 1 lime

1 tablesp. olive oil

Stir-fried Spinach

A little oil

1 garlic clove, peeled and crushed

1 red pepper, deseeded and cut into strips

500g spinach, washed and tough stalks removed

To serve: Baked potatoes

Combine all the marinade ingredients. Place the chops in a dish and pour over the marinade. If you have time allow the chops to marinate for 15-20 minutes.

Meanwhile to make the salsa combine all the ingredients in a bowl, season and taste.

Preheat the grill or barbecue. Cook the pork chops for three to four minutes on each side, depending on thickness.

While the chops are cooking heat a little oil in a wok or large frying pan. Add the garlic and red pepper and stir-fry for a minute. Then add in the spinach and stir-fry until it begins to wilt.

Serve the chops with the mango salsa, stir-fried spinach and baked potatoes.
