Pumpkin & Potato Soup

Happy Eve of Hallooooooween !!

Always great fun here at Ballyknocken House and Cookery School for Halloween! Our Halloween Head Chef Junior Chef classes have been a tremendous success and to see the little ones, develop and grow in confidence with these classes is always a fantastic sight.

Definitely noticing a big drop in temperature the past week! Here’s my pumpkin and potato recipe to help you keep warm over the Halloween festivities !

Cumin Soup 1

Pumpkin- potato soup

500g pumpkin (without seeds and peeled)

2 peeled potatoes

“Clear soup” or chicken bouillon mixed with water

40g butter

Salt

Pepper

Nutmeg

“Creme fraiche”

Parsley

White bread

Garlic

Butter

Cut the pumpkin and the potatoes into small pieces and roast them into butter. Pour “clear soup” in it and cook it (“koecheln” very low heat). “puerriere” the soup and cook it again. Then flavour the soup with salt, pepper and nutmeg and add the “Crème Fraiche”. Decorate with parsley.

Cut the white bread into small pieces, press garlic and put it on top. Then roast the bread into butter.
