Chocolate French Toast with Hazelnut, Raspberries and Maple Sauce
There is only a hint of chocolate in this one and the raspberries balance out the sweetness well. That is my theory! You can slice brioche buns lengthways or even use slices of barm brack for a very delicious French toast.
For the batter
3 eggs, beaten
¼ tsp cinnamon
3 tbsp cocoa powder
3 tbsp icing sugar
4 slices brioche bread, each slice cut into two
For the topping
2 tbsp icing sugar
3 tbsp hazelnuts, toasted and roughly chopped
100g raspberries, washed
3 tbsp maple syrup
- Whisk together the eggs, milk, cinnamon, coco powder and icing sugar in a large shallow bowl. Heat a little oil in a large non-stick frying pan over a medium heat.
- Using a fork, dip the bread into the chocolate egg batter and place into the frying pan. Cook until lightly golden. Using an egg lifter, transfer to a serving plate and dust with the icing sugar. Sprinkle over hazelnuts and raspberries and drizzle over the maple syrup. Serve immediately.
