In today’s episode of Catherine’s Family Kitchen I am hosting a dinner party for my cousin’s birthday. A dinner party is always a great occasion to try out (and test on family guinea pigs) new recipes. So I thought today I would share my fave recipes for a dinner party starting with my Peach & Basil Crumble. Perfect dessert for any family/ dinner party occasion.
Peach and Basil Crumble
Serves 4 – 6
For the sauce:
4 basil leaves, finely chopped
100g caster sugar
For the crumble:
65g plain flour
65g wholemeal flour
65g brown sugar
5 walnuts, roughly chopped
Natural yoghurt or ice cream, to serve
Preheat the oven to 190°C/fan 170°C/gas 5. Butter an ovenproof pie dish.
Place the peaches, basil and caster sugar in a saucepan. Cover and cook for 5–10 minutes, until the fruit has softened.
Meanwhile, to make the crumble topping, place the plain and wholemeal flour in a mixing bowl. Rub in the butter with your fingertips until the mixture resembles breadcrumbs. Stir in the sugar, oatmeal and walnuts.
Spoon the fruit into the buttered ovenproof dish and sprinkle the crumble topping over the fruit. Bake for 20 minutes, until golden brown. Serve warm with a spoonful of yoghurt or your favourite ice cream.
